Name the sweetest God-given treat known to man. Honey, you may say. That’s fair and a debate for another day, but I say dates. Nothing beats a soft, plump, and chewy medjool date. You may have noticed that these unassuming desert fruits are having a moment. While they may be new to the mainstream palate, they are a regular member of a typical dessert spread in our family. Usually featured alongside other dried fruits and various nuts, they have a more special countenance in our house. Especially for holidays like Easter, Christmas or New Years, my dad serves these babies stuffed with smooth, cool breakfast cream (called Սեր pronounced “Ser” in Armenian) and walnuts. The indulgent confections of my dad’s imagining, are the inspiration for this chocolate covered variant. 

I’m sure you’ve all come across the now infamous Snickers dates. These are like those but better. Stuffed with peanut butter, yes, but swap out the peanuts for walnuts instead, and you have a more balanced and complementary combination. I find the peanuts with peanut butter to be too dominant on the peanut flavor, and overpowering to the caramelly goodness of the dates. And of course, dipping them in melted coconut oil infused chocolate makes this an absolutely glorious candy on candy creation. Sea salt flakes on top are vital to the overall flavor balance and ultimate perfection. INGREDIENTS

INSTRUCTIONS 

  1. Halve and pit the dates. 
  2. Spread about ½ teaspoon of peanut butter into each date half. 
  3. Break the walnut halves into smaller halves and stuff a half into each date.
  4. Arrange the stuffed dates onto a parchment paper lined tray or plate and place in the freezer while you prepare the chocolate. 
  5. Melt the chocolate chips and coconut oil over a double boiler until smooth. Allow to cool for a few minutes.
  6. Remove dates from the freezer and dip each one in the melted chocolate, coating them completely. Arrange on the parchment paper lined tray or plate. 
  7. Sprinkle each date with flakey salt and return to the freezer. 
  8. Freeze for at least 1 hour before enjoying. 
  9. Store in an airtight container in the freezer for up to 1 month.
