Costco croissants 🥐 are hands-down the best accessible croissants. They have been since childhood, even though they’re different than I remember. They’re even better now. I love having a big box of those sitting on the kitchen counter for a few short days. They usually end up toasted either plain or with a nice melty cheese or made into hearty breakfast sandwiches full of eggs, bacon, and cheese. Lately, they’ve been almost exclusively turned into these amazing Almond Croissants. Since I first started making these only a few weeks ago, I’ve also tried them at various bakeries, and not to brag, but they all fall short. These are truly great. Try them and you’ll know.
Of course the foundation is the exceptional croissant that good old Costco provides. I can’t fault it in any way, and dressing it up with a healthy schmear of this beautiful almond paste is nothing short of a tasty tribute to its glory. Man, this filling…It’s a lovely light, yet rich and creamy almond flour and butter based frangipane-like spread that unites harmoniously with the flakey, buttery (made with REAL butter no less 🧈) croissant. As it oozes out of the toasty croissant and dribbles down the sides during baking, it slightly caramelizes into a candy-like crust that you can’t help but pick off and sample straight out of the oven 🤤. I shamelessly do it every time. And oh my gosh that smell; the kitchen will smell divinely aromatic. After baking, the croissant gets super crisp on the outside and soft and gooey on the inside. Every single bite is heavenly and it’s over too soon . You will be licking the flakey crumbs off your plate and the select toasty almonds (dusted with that snowy powder ☃️ of sugar) that inevitably fall off.
You can easily adjust this recipe to transform all dozen croissants if you wish or even just one or two. Try your hardest to let these beauties cool for at least a few minutes before enjoying them with a cup of coffee or tea for a truly transcending treat. If you didn’t know any better, you’d think these were just brought in from a fancy French bakery, they’re that good. They’re impossible to resist when just baked; diets be danged!
