Almond Matcha Croissant

If it’s not completely obvious by now, we’re on a major matcha kick over here. From lattes, to frozen yogurt, to scones, we’re putting the coveted green stuff in everything. Naturally, it was only a matter of time before I stuffed some into the almost-weekly batch of almond croissants that comes out of our oven. Almond Matcha Croissants are a green tea flavored version of the classic almond croissant worthy of being in a bakery window.

Inspired by the matcha croissants we sampled from a local high-end 🧐 bakery that specializes in [very impressive, technical, awe-inspiring] croissants, I decided this is a flavor I should replicate. Having reasonably enjoyed the fancy 🎩 patisserie version, I opted to merely adapt my own Almond Croissant filling with a dose of matcha powder and complimentary cinnamon. The matcha is just enough to taste its pleasant earthiness without becoming bitter and the cinnamon imparts a hint of spice and sweetness that plays well with the green tea. These new flavor elements are carried beautifully by the rich almond paste and the flakey croissant for a treat that tastes as good as a $9 bakery-bought item.

INSTRUCTIONS

  1. Preheat the oven to 350°F and line a baking sheet with a silicone baking mat or parchment paper.
  2. In a small bowl, mix together the butter, almond flour, sugar, matcha, egg, vanilla extract, and almond extract until smooth and like a thick paste. Add more almond flour if needed to thicken it up. 
  3. Slice the croissants in half. 
  4. Spread about a tablespoon of the almond paste on the bottom of each croissant, then place the tops back on. Arrange them onto the prepared baking sheet.
  5. Spread another tablespoon or so on the tops of the croissants. 
  6. Bake for 12-15 minutes until the filling is oozing 😋 out and croissants are crispy and browning. 
  7. Allow to cool for a few minutes before dusting with powdered sugar and enjoy with a nice hot Matcha Latte! 🍵
