It’s fun to be known as the baker in your inner circles. You get lots of things. Mostly these things consist of requests for sweet treats. You’re happy to oblige because half the fun of baking is sharing and also you’re flattered that they come to you with their cravings. It’s a warm and fuzzy feeling. And then sometimes you get the out-of-the-blue, “I saw this and thought of you” little tokens of serendipitous appreciation. That’s a very roundabout way of beaming about the jar of rainbow sprinkles I got as a gift. My husband’s aunt saw and bought them because they were “cute” then realized I should have them since she doesn’t bake. She’s right, they are really cute. As happy as I was to just stare at them sitting in my pantry, that happy little jar of jimmies (make sure you use jimmies!) inspired me to give them a better, more cookier home.

Whoever thought of throwing fistfuls of flecks of rainbow-colored sugar into a recipe must have been an absolutely delightful person. What a genius way to dial up the sweet level without altering the flavor or structure of the treat. Funfetti flavored anything makes life so happy you just want to swirl around sprinkling the rainbow morsels all over. 

This happy little recipe for fun and colorful sugar cookies is so easy it should be made all the time just for their sheer joy-inducing factor. The sugar cookie base is simple and turns out with perfectly crackled tops, slightly gooey centers, and the right balance of crisp and chew. The sprinkles elevate the basic cookie just enough that you can’t help but smile before (and after) snacking on one. I love these cuties and you will too.

INGREDIENTS

  • 2 cups all-purpose flour
  • ¾  cup unsalted butter, room temperature
  • 1 ½ cups granulated sugar
  • 2 eggs, room temperature
  • ⅛ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • ½ cup rainbow jimmie sprinkles

INSTRUCTIONS

  1. Preheat oven to 350° F. Line cookie sheets with silicone baking mats.
  2. In a stand mixer, beat together the butter and sugar until smooth and creamy.
  3. Add in eggs, one at a time until combined then mix in vanilla extract.
  4. Mix in the flour, baking soda, baking powder, and salt until all ingredients are well-incorporated. Fold in the rainbow sprinkles with a rubber spatula or wooden spoon to keep them intact.
  5. Scoop out dough with a cookie or ice cream scoop. Gently roll scooped dough with hands to make smooth balls and place on baking mats, spaced about 2 inches apart.
  6. Bake for 10-12 minutes until edges are just set and centers are still gooey.
  7. Allow to cool on baking sheets before transferring to a cooling rack to cool completely.
