Korean-Inspired Beef Stir Fry takes the great basic flavors of Korean barbeque and makes an amazingly delicious and quick stir fry. You get the same balance of sweet, salty, tangy as this Korean Chuck Roast in a fraction of the time it takes to slowly braise a hunk of meat 🍖. Such an easy and tasty weeknight dinner with minimal prep definitely checks all the boxes. ✅ ✅ ✅ 

Mix up a quick marinade using some Korean staple flavors like soy sauce, gochujang, brown sugar,  sesame oil, rice vinegar, and fresh ginger and garlic. Let the meat swim in that for as little as 30 minutes and you can already get to stir frying. You’ll want to use every last drop of this sauce as you cook up thinly sliced flap meat. Toss in two kinds of onions for the last few minutes and thinly sliced Korean red chili pepper so they keep their crunch and you’re done. 

Spoon heaps of this on top of simple Steamed Rice and serve with Korean Cucumber Salad 🇰🇷🥒 and kimchi. You’ll love how quickly this super flavorful meal comes together. It’ll be a new weeknight (or anytime!) favorite.

INGREDIENTS

  • 1 pound flap steak 🥩, sliced into thin strips 
  • 2 teaspoons fresh ginger 🫚🫚, minced
  • 3 cloves garlic 🧄🧄🧄, minced
  • ¼ cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon gochujang
  • 1 tablespoon rice vinegar 
  • 1 teaspoon sesame oil
  • 1 teaspoon gochugaru 
  • 1 white onion 🧅, sliced into half moons
  • 5 green onions, cut into 1” chunks
  • 3 Korean red chili peppers 🌶️🌶️🌶️, thinly sliced (optional)
  • 3 tablespoons avocado oil 🥑🥑🥑

INSTRUCTIONS

  1. In a mixing bowl, stir together the ginger, garlic, soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, and gochugaru until well-combined. 
  2. Add in the steak and white onions and mix to coat well in the marinade. 
  3. Cover the bowl with plastic wrap and refrigerate 30 minutes to 1 hour or overnight. 
  4. Add avocado oil to a wok or skillet  and heat over medium. 
  5. Fish out the onions from the marinade and set aside. 
  6. Stir fry the steak with the marinade until cooked through and browned and liquid is reduced.
  7. Add in the white onions, green onions, and red chili peppers and cook quickly, only 2-3 minutes. 
  8. Remove from heat and serve with steamed rice 🍚, cucumber salad, and kimchi.
