  • 1 pound chicken breast, sliced in half
  • 2 tablespoons olive oil, divided
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon fennel seeds, crushed
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper

INSTRUCTIONS

  1. Add the chicken and all the marinade ingredients to a large mixing bowl. Mix well to coat all the chicken and let sit while making the pasta.
  2. Cook pasta al dente. Reserve 1 cup of pasta water. Drain and rinse.
  3. Add 2 tablespoons of olive oil to a large bowl. Add in the pasta and toss to coat.
  4. Stir in the pesto and reserved pasta water until all the pasta is well-coated in the pesto. Add more pasta water, if needed. Add in the sundried tomatoes and mix.
  5. Heat 1 tablespoon olive oil in a grill pan over medium heat, then add in the chicken breasts and cook through. Set aside to cool then slice.
  6. Plate the pasta and serve with sliced grilled chicken and crusty bread and enjoy!
