Warm and creamy Spinach Artichoke Dip is a cozy, comforting appetizer fit for any gathering or even a special weeknight snack. It’s amazing that it only takes a few ingredients to make something so deliciously rich and crave-worthy. It definitely helps that almost half of those ingredients are cheese and or sour cream. Not to be outdone, spinach and artichokes put on their best performance in making this a real winner of a dip. Everything together becomes a creamy blend of cheese and vegetables with pleasantly mild flavor and just the right texture for scooping/spreading. While it is indulgent, none of the elements are too strong or overpowering, so it’s quite easy to polish off half the dish in one sitting.

INGREDIENTS

INSTRUCTIONS

  1. In a large saucepan, heat the olive oil then add in the garlic and cook until fragrant, about 30 seconds. 
  2. Add in the spinach a little at a time until it wilts, stirring frequently. Season with salt to draw out the moisture and cook on medium-high heat until most of the liquid has evaporated, about 5 minutes.
  3. Add in the chopped artichokes and stir to combine with all the spinach.
  4. Stir in the cream cheese, mozzarella cheese, and parmesan cheese and mix until well-combined and melted.
  5. Remove the pan from heat and stir in the sour cream. Season with salt and pepper, to taste.
  6. Transfer the mixture to an oven-safe dish and top with extra mozzarella and parmesan cheese.
  7. Broil for 5 minutes until the cheese topping is melted and bubbly. 
  8. Serve warm with chips or crusty bread and enjoy!
