French Toast is one of those great inventions (a delightful cereal also) that I sometimes forget exists. When I recently remembered it out of sheer survival, I had to commend myself for what I now consider this genius “mom hack.” You see, it has become an endearing, yet slightly panic-inducing habit around here, that Little Slim Fatty morning greeting is a declaration that he wants pancakes. This is usually fine. Chances are, there’s a batch of banana blueberry pancakes ready to go for the week so all I have to do in the morning is warm them and add toppings. Easy peasy. 

Trouble strikes, however, when this declaration is made the morning after that batch runs out, and that’s when the fight or flight kicks in. On one such occasion, I finally remembered I can easily pawn off French toast as pancakes to even a clever toddler. So that’s how these happy strawberry sprinkle french toasts got created. 

They work wonderfully as a pancake decoy since the whole concept, presentation, and consumption is very pancake-like. Even if I don’t have a pre-made batch of these, it’s too easy to quickly make even just 1 or two pieces for a fun and satisfying kiddy breakfast. Adding strawberries is a nice way to include a serving of fruit to get a head start on the day. And while not absolutely necessary (some say they are absolutely necessary 😆), the sprinkles definitely make the whole experience more enticing and special, so odds of little one finishing this meal are high. They make mornings around here more fun and less stressful since they’re kid-pleasing and quick and easy to make. That checks all the boxes for a successful mom-hack in my book.

INSTRUCTIONS

  1. In a shallow dish, whisk together the eggs, vanilla extract, and cinnamon.
  2. In a large skillet over medium heat, add the coconut oil.
  3. Dip each slice of bread in the egg mix, making sure to soak both sides well.
  4. Cook the soaked toast over medium until both sides are nicely browned.
  5. Slather each toast with butter, drizzle with syrup and garnish with strawberry chunks and sprinkles.
  6. Serve warm and enjoy!
